Chocolate Buttermilk Sheet Cake.

Today was the my General Manager’s birthday so I made him a cake and this was the cake I made.

2 Cups of all purpose flour

2 cups of granulated sugar

3/4 cup of u sweetened cocoa powder

1 teaspoon of baking soda

1/2 teaspoon of salt

1 1/4 cup vegetable oil

1 1/4 cups buttermilk

3 large eggs

1 cup of strong,cooled coffee

1 Tablespoon pure vanilla extract

Preheat the oven to 350 degrees F.Grease and flour a 9″ X 13″cake pan. Place the flour, sugar,cocoa,baking soda, and salt into a large mixing bowl and whisk to combine. Add the oil, buttermilk, eggs, coffee, and vanilla and whisk until smooth. Scrape the batter into prepared pan and bake for about 45 minutes, until the cake feels firm when lightly touched in the center or a toothpick inserted in the center comes out clean. Cool the cake completely in the pan. Dust with confectioners’ sugar and serve right out of the pan.

Makes 24 pieces.

Note: you can substitute buttermilk by putting 1 Tablespoon lemon juice in a measuring cup and adding whole milk to the 1 1/4 cup line. Microwave for 30 to 45 seconds and stir. The milk will be thickened and curled.

    1. It was a big hit. Everyone that tired it loved it and the whole cake was gone by the end of my shift yesterday.

    1. It’s really simple. And the best part no frosting because as much as I try I can not frost a cake to look nice to save my life.
